Product Description
Lion Tamer is the label Hess uses for its more expressive, less buttoned-up wines, and the Napa Cabernet makes that case best. The family has farmed on Mount Veeder since the 1970s, and mountain fruit brings a firmness that keeps this wine from sliding into the soft, sweet register a lot of Napa Cabernet has drifted toward.
Dark and structured: cassis, black cherry and plum with cedar, cocoa and a graphite edge, framed by fine-grained tannin. It wants protein — ribeye, lamb, a deeply savoury mushroom ragu. Decant it for an hour and it repays the trouble.
