Product Description
Iron Corral comes off the steep volcanic slopes of Mount Veeder, where Hess has farmed since the 1970s and where Cabernet ripens slowly and yields very little. Mountain sites like this produce small berries with thick skins, and the wine that follows is denser and more angular than valley-floor Napa — a single-vineyard bottling for drinkers who want Cabernet with edges.
Concentrated and savoury: cassis, black plum, crushed rock, cedar and dark chocolate, with substantial but well-managed tannin and a long close. It will improve for years yet. To drink now, decant well ahead and serve with a properly rare steak.
