Eight years in barrel is a real commitment for a rum at this end of the shelf, and it is the whole reason to pick up this bottle. Time in wood is what turns raw cane spirit into something you can sip: the sharp edges round off, the sugar notes deepen into caramel and dried fruit, and the texture fills out considerably.
Expect toffee, brown sugar, banana and a little baking spice, with vanilla and oak on a warm, moderately dry finish. Good neat over a single cube, and better still in a daiquiri or an old fashioned where eight years of age genuinely shows.
