Unaged tequila is the honest test of a distillery, because there is no barrel to hide behind. Hornitos passes it on the strength of its raw material: 100 percent blue agave, cooked, fermented and distilled without shortcuts, bottled clear and priced to stay in constant rotation.
Assertive and dry — green agave, black pepper, a mineral edge and a short citrusy finish. This is a cocktail workhorse. It makes a lean, proper margarita, holds its shape in a paloma, and takes a salt-and-lime shot without wincing. Serve it very cold and skip the sugary mixers.
