Anejo mezcal is a small category, and Ilegal makes one of its most convincing examples. The base is the same Oaxacan espadin spirit the brand built its reputation on — pit-roasted, crushed, twice distilled in copper — then given over a year in American oak. The smoke does not disappear; it deepens and turns sweeter.
Expect roasted agave and woodsmoke wrapped in caramel, dried fig, cocoa and warm baking spice, with a long resinous finish. Serve it neat at room temperature in a copita and give it some air. A bottle for the end of a meal rather than the start of a night.
