Distilled at 7,200 feet in the Sierra del Tigre mountains of Jalisco, Insolito is built on a short list of ingredients: agave, water, yeast. Nothing is added to shade the color or round off the texture, and the brand's place in the Additive Free Alliance is the guarantee. The anejo is the most patient bottling in the range, resting a year and a half or more in new American oak until the agave and the wood stop arguing and start agreeing.
Expect baked agave, toasted vanilla, dried apricot and a warm cinnamon close that lingers without heat. Pour it into a copita or a heavy rocks glass and leave the mixers in the cabinet. This is a slow-evening tequila, and a graceful stand-in for aged rum at the end of a meal.
