Product Description
Unaged tequila leaves the distiller nowhere to hide, which is rather the point. Insolito Blanco spends about six weeks resting and then goes straight into the bottle, additive-free, made from agave, water and yeast alone. The distillery works at altitude in Jalisco's Sierra del Tigre mountains, and the result reads bright, mineral and unmistakably vegetal.
Look for cut grass, lime zest, white pepper and a faint saline note across a short, tidy finish. This is the bottle for margaritas and palomas where you want the agave audible, and it is clean enough to sip cold on its own. Ideal for a home bar that mixes more often than it sips.
