Agave, water, yeast, and a producer willing to leave it at that. Insolito Blanco rests only about six weeks before bottling, just long enough to settle, which leaves the character of the agave fully exposed. It is an additive-free tequila from a distillery working at altitude in Jalisco's Sierra del Tigre, and it tastes like a bottle with nothing to hide behind.
Clean and faintly sweet up front, with green pepper, citrus peel, wet stone and a clipped peppery finish. It makes a margarita that actually tastes of agave rather than sugar, and it holds its own neat in a small glass with a wedge of lime alongside. A smart pick for anyone leaving mixto tequila behind.
