Justerini and Brooks began as a London wine merchant in 1749, and the pale, light-bodied blend that carries its initials became one of the defining Scotches of the mid-century cocktail era. J and B Rare is assembled from a long roster of malt and grain whiskies chosen for lightness rather than weight, which is exactly why it mixes so cleanly. Soft honey, green apple and a touch of heather on the nose, then a smooth, gently grassy palate with almost no peat. Drink it with soda and a lemon twist, over ice, or in a tall highball. A good house Scotch for anyone who finds the smoky styles too much.
