Pure Paso is a proprietary red built around Cabernet Sauvignon and Petite Sirah, a pairing that plays to everything the region does well: heat-ripened fruit, deep color and tannins with real grip. It sits a clear step above the winery's varietal range without leaving value territory.
Blackberry, cassis and dark plum, layered with espresso, dark chocolate, vanilla and toasted oak, closing long and firmly structured. Give it an hour in a decanter. Serve with a dry-aged steak, smoked brisket, venison, or a mature hard cheese.
