Wilkes has a quiet reputation among California wine people for well-farmed bottlings that ignore fashion entirely. This is an unshowy white that rewards paying attention to it.
Green apple, white pear and a faint almond note, with a stony, dry finish and acidity that stays taut from first sip to last. Serve it cold in a white wine glass. Excellent with shellfish, grilled trout, a simple risotto, or a cheese board leaning soft and mild.
