Bottled in bond is one of the few genuinely strict labels in American whiskey: one distillery, one season, at least four years in a federally supervised warehouse, and exactly 100 proof in the bottle. Jack Daniel's Bonded is the house applying that old standard to its own whiskey, drawn from barrels in the upper reaches of the rickhouse where the wood works hardest.
Richer and firmer than the black label, with dark caramel, toasted oak, dried cherry and a peppery warmth that the extra proof carries well. A few drops of water opens it up neatly, and it is strong enough to hold its shape in an old fashioned.
