Maison Louis Jadot has worked out of Beaune since 1859, which is long enough to have learned that the regional Bourgogne bottling is the one that earns a house its reputation with ordinary drinkers. There is nowhere to hide at this level. What arrives in the glass is unoaked-leaning, precise Burgundian Chardonnay, the benchmark against which every New World version is quietly measured.
Green apple, white flowers and a squeeze of lemon sit over a chalky, mineral finish with real tension. Serve it cold but not frozen, and give it a large glass. Beautiful with roast chicken, scallops, gruyere or a simple plate of oysters.
