Chicago has a lot of civic traditions, and drinking Malort is one of the strangest. Carl Jeppson brought the Swedish bësk style to the city during Prohibition, built on wormwood, and the recipe has been punishing and delighting locals ever since. It is sold here less as a flavour than as a rite of passage, and every bar on the North Side knows the face people make.
Bitter, herbal and resolutely grapefruit-pith on the finish, with a long wormwood bite that does not negotiate. Serve it ice cold as a shot, or use a small measure to give a cocktail genuine bitterness. Buy it for visitors, for the shelf, and for the photograph.
