Joh. Jos. Prum is one of the most revered names in German wine, a Mosel estate whose Rieslings are collected worldwide and famous for aging for decades. This is a Kabinett from the Graacher Himmelreich, a steep slate vineyard above the river, in the well-regarded 2019 vintage. Bottles from this address rarely sit on a shelf for long.
Weightless but intense, with lime, white peach and wet slate over a thread of honeyed sweetness that acidity holds perfectly in check. Alcohol is low by design, so it drinks lighter than almost anything nearby. Serve it very cold, with sushi, pork schnitzel, spicy noodles, or nothing at all.
