Dry rosé stopped being a summer novelty some years ago, and bottles like this are why. Made in the pale, crisp Provençal idiom rather than the sweet pink style of a generation back, it is a proper dry wine that happens to be gorgeous in the glass, and it is priced to be opened without an occasion attached.
Wild strawberry, watermelon rind and pink grapefruit over a stony, mineral core, finishing brisk and dry. Serve it thoroughly cold with grilled shrimp, a salad niçoise, soft cheese, or a pizza eaten outdoors. Works from lunch through sunset, which is more than most wines can claim.
