Product Description
Restraint is the house signature. Where much of the state chases weight, this Sonoma County estate picks earlier, uses oak as seasoning rather than sauce, and blends small amounts of Merlot and Petit Verdot to round the frame. The result is a Cabernet with structure and perfume instead of sheer muscle, and it has been made that way with remarkable consistency for decades.
Blackcurrant, plum and violet lift over cedar, graphite and a faint herbal edge, closing long on fine-grained tannin. Open it an hour early, serve it at cool room temperature, and put it beside a ribeye, braised short ribs or roast leg of lamb. A benchmark bottle for a special dinner.
