Baked apple, lemon curd and a wash of vanilla: Josh Cellars makes the kind of California Chardonnay that knows exactly who it is for. Partial oak aging rounds the edges without burying the fruit, landing between the lean unoaked style and the big buttery bottlings of an earlier era. For a lot of drinkers, that middle ground is the sweet spot.
Medium-bodied and creamy, with enough acidity to stay lively through a second glass. Chill it well and serve it with roast chicken, cream sauces, crab cakes or a wedge of aged cheddar. It also does fine on a porch in August with nothing alongside it at all.
