Product Description
Justin Vineyards helped prove that Paso Robles could grow serious Cabernet, and it started doing so in the early 1980s, when almost nobody was looking at that stretch of California. The estate's reputation rests on Bordeaux-minded winemaking - measured oak, real structure, fruit that is ripe without being sweet - and the Cabernet is where that thinking is easiest to taste.
Cassis, black cherry and dark plum over cedar, graphite and a fine layer of vanilla, with tannins that are firm and well integrated. Decant it for half an hour. Pour it with dry-aged steak, rack of lamb, hard cheeses or a mushroom-forward dish. It will also reward a few years in the rack.
