Illuminate is the lighter-bodied Sauvignon Blanc in the Kim Crawford range, drawn from Marlborough, the district that put New Zealand on the map for this grape. It is built for a leaner frame and a lower alcohol level than the standard bottling, and it is offered on exactly those terms and no others.
The glass is bright and crisp: grapefruit, lime, passionfruit and a green-herb note over a dry, zippy finish. Serve it thoroughly cold in a smaller glass. It suits oysters, ceviche, goat cheese, asparagus, herb-heavy salads and grilled white fish, and it makes a clean, sharp aperitif on a warm evening.
