La Crema spent its first decades known almost entirely for Pinot Noir and Chardonnay, which makes the Cabernet the quiet member of the family. It is built in the same house style: fruit first, oak used as seasoning rather than architecture, and a finish that stays polished instead of chewy.
Blackberry and cassis lead, with cocoa, sweet spice and a supple tannin that does not demand years in a cellar. Serve at cool room temperature after twenty minutes open. Strong with steak, burgers, lamb chops or mushroom risotto, and easygoing enough for guests who would rather not wrestle a big red.
