Lalo Gonzalez is the grandson of Don Julio Gonzalez, and he launched this tequila with a deliberately narrow brief: one expression, blanco only, no additives, no barrel, nothing standing between the drinker and the agave. It has become a bartender favorite on exactly those terms.
The spirit is clean and bright, with cooked agave, green pepper, citrus and a touch of mineral salt, finishing crisp rather than hot. Serve it neat in a small glass, or use it where the tequila is meant to be tasted: a margarita with fresh lime, a paloma, or simply over one large cube.
