Lambrusco is a sparkling red from northern Italy, and after decades of being written off as a novelty it has come back into serious favor. The best versions are dry, dark purple, faintly bitter and built to cut through rich food, which is exactly the job it has done at Emilian tables for generations.
Expect blackberry and sour cherry with a violet lift, a fine froth and a savory, mouth-cleansing finish. Serve it properly cold, colder than you would serve any other red, in an ordinary wine glass. Nothing suits it better than salumi, prosciutto, lasagna, fried food, or a pizza straight out of the oven.
