Domaine de Chevalier has been a reference estate of Pessac-Leognan for well over a century, and L'Esprit de Chevalier is how the property shares that address at a civilized price. Same team, same gravelly Graves soils, younger vines and a shorter stay in oak. It is one of the more reliable ways to drink real Bordeaux on a weeknight.
The wine is classically built rather than flashy: cassis and dark plum framed by cedar, graphite and fine tannin, finishing dry and savory. Open it an hour ahead and serve at cool room temperature with roast lamb, duck, or a wedge of hard cheese and good bread.
