This is the bottle behind a hundred bar menus. Lillet Blanc blends Bordeaux white wine with citrus liqueurs, made the same way at Podensac for more than 150 years, and it is the aperitif that taught a lot of Americans the ritual of a drink before dinner. Still the definitive version of the style.
Candied orange, honey and lime over a light resinous bitterness, gently sweet and genuinely refreshing. Serve it very cold over ice with an orange wheel, lengthened with tonic, or stirred into a Vesper. It also handles oysters, olives and salty snacks before a meal.
