Double Cask is Macallan reconciling two oak traditions in one glass. Sherry-seasoned American oak contributes a lighter, sweeter, vanilla-led character; sherry-seasoned European oak brings the dried fruit and spice the distillery is famous for. Marrying them produces a twelve-year-old that is noticeably more approachable than the classic sherry bottling without sacrificing the house signature.
Honey, citrus, toffee and butterscotch lead, with raisin and light oak spice behind and a warm, medium-length finish. Serve it neat in a tulip glass at room temperature; a few drops of water lift the sweetness. A very well-judged introduction to a distillery that can otherwise be intimidating.
