Bill Samuels Sr. burned his family's inherited whiskey recipe in 1953 and started again, swapping rye for winter wheat and hand-dipping every bottle in red wax. The Loretto, Kentucky distillery still does both, and that dripping seal remains one of the most recognizable objects in American whiskey.
Wheat is the entire point: it softens the grain bite and lets caramel, vanilla, baked bread and gentle orchard fruit move to the front. Mellow enough to drink neat, sturdy enough for an old fashioned or a mint julep, and dependable in anything built over ice. A permanent bar fixture.
