Thirty-five percent alcohol instead of twenty-one. That is the whole idea behind Malibu Black, and it changes the drinking more than the number suggests: the coconut is still front and center, but there is enough rum character behind it to survive a cocktail rather than dissolve into the mixer.
Drier and firmer than the original, with toasted coconut, a little brown sugar and a genuine rum backbone carrying the finish. Use it where standard Malibu turns sweet — a stronger pina colada, a coconut daiquiri, rum and pineapple with a squeeze of lime. Serve over plenty of ice.
