Created in 1912, Cordon Bleu is the bottling that made the Martell name in the luxury tier and it remains the house at its most recognizable. The blend leans heavily on eaux-de-vie from Borderies, the smallest and most prized of the Cognac crus, which is where its signature roundness comes from. This is a benchmark pour, not an occasional novelty.
Expect candied plum and quince, toasted hazelnut, honey and a long finish that drifts into gingerbread and soft leather. Serve it neat in a tulip glass, slightly below room temperature, and let it sit a minute before the first sip.
