Sonoma County grows Cabernet Sauvignon with slightly cooler nights than its neighbor across the mountains, and the wines show it: a little more restraint, a little more savory edge, the fruit less exuberant and more composed. Louis M. Martini, in business since 1933, has spent decades learning those vineyards. The result is a Cabernet with structure you can actually taste.
Black currant and dark cherry sit alongside cedar, graphite and firm but polished tannin, finishing dry and long. Decant it or open it early. This is steak wine first and foremost, but it also rewards lamb, venison and aged cheddar.
