Mercer and Prince is a Canadian blended whisky with an unusual finishing step: time in Japanese mizunara oak, a notoriously difficult and porous wood that Scotch and Japanese distillers prize for the aromatics it contributes. The bottle design draws the eye, but the cask choice is the part worth paying attention to.
Canadian whisky starts out light and grain-sweet, and the mizunara pushes it toward sandalwood, coconut and incense alongside honey, vanilla and soft orchard fruit. It is smooth enough to sip over a large cube and distinctive enough to make an interesting Highball or Old Fashioned.
