Time changes agave spirit more than most people expect. A year or more in oak converts the bright vegetal snap of young tequila into something closer to a whiskey in weight and color, without erasing what it was made from. Añejo is the tier where tequila stops being a mixing ingredient and becomes a spirit to sit with.
Look for cooked agave woven through caramel, toasted oak, dried apricot and a soft cinnamon warmth, with a long and gently sweet finish. Serve it neat in a copita or a Glencairn at room temperature, no ice, and give it a few minutes in the glass before the first sip.
