Mijenta was built around its maestra tequilera, Ana Maria Romero Mena, one of the most respected palates in agave, and it shows in a blanco with no additives and nothing to hide. The agave is grown in the Jalisco highlands and slowly cooked, then bottled without the sweeteners and glycerin that smooth over lesser tequila. A serious pour for people who read labels.
Cooked agave leads, followed by green pepper, citrus zest and a soft mineral close with real texture rather than raw heat. Drink it neat from a copita to catch the detail, or let it carry a very simple margarita built on fresh lime.
