Beneath Epernay, Moet & Chandon keeps miles of chalk cellars cut into the subsoil, and the scale of that operation is what lets the house experiment. Ice Imperial came out of it: a Champagne composed from the start for service over ice, with the extra weight and dosage needed to stay in balance as the cubes melt. Unorthodox, and thoroughly considered.
Rich and expansive, with mango, guava, white peach and a caramelized note over a full mousse. Build it in a large wine glass over three ice cubes and finish with mint or a strip of lime zest.
