Demi-sec Champagne has quietly fallen out of fashion among purists, which is their loss. Nectar Imperial is Moet & Chandon leaning deliberately into richness and sweetness, and it has found an enormous audience for a simple reason: it is delicious, and it works where a bone-dry brut struggles. House founded in 1743 in Epernay, and still setting the terms of the conversation.
Generous and tropical, with mango, white peach, apricot and honeyed stone fruit over a soft, persistent mousse. Serve it very cold. It is genuinely good with dessert, spicy food, fried chicken and cheese, which few Champagnes can claim.
