Rose Champagne is harder to make than white, because color and fruit have to be judged rather than simply allowed. Moet & Chandon has been working the problem since the eighteenth century, and its rose is the one that made the style mainstream rather than a curiosity. Pink Champagne stopped being a novelty a long time ago, largely thanks to bottles like this.
Wild strawberry and raspberry lead, with a savory redcurrant edge, fine bubbles and a crisp, dry finish. Serve it properly cold in a tulip glass. Beautiful with salmon, duck, charcuterie, summer berries or a simple bowl of strawberries.
