Champagne over ice was considered close to sacrilege until Moet & Chandon made a wine specifically for it. Ice Imperial is built with more body and a richer dosage than a standard brut precisely so that melting ice dilutes it into balance rather than out of it. Deliberate engineering, not a shortcut, and the first Champagne of its kind.
Fuller and rounder than a classic brut, with tropical fruit, white peach and a touch of caramelized sweetness over a broad mousse. Serve in a large wine glass with three good-sized ice cubes, and garnish with mint, lime or grapefruit peel.
