Product Description
Chablis is Chardonnay grown about as far north as the grape can reliably ripen, on ancient seabed limestone that leaves its mark on every bottle. There is no tropical fruit here and very little oak influence; the appeal is precision. With a decade in bottle, a wine like this has traded some youthful tension for depth.
Expect green apple and citrus over a stony, almost saline core, with a firm line of acidity and a long dry finish. Serve it cool rather than frozen, and give it a few minutes in the glass. Oysters are the classic match, along with scallops, goat cheese and roast chicken.
