Barbados is where rum was more or less invented, and Mount Gay traces its records to 1703, which makes it one of the oldest names in the category. Eclipse is the house style: pot and column distilled rums blended and aged in American oak, built for versatility rather than spectacle. It is the bottle a well run bar keeps within arms reach.
Light amber, with banana, vanilla, dried apricot and a hint of oak spice, finishing clean and faintly sweet. Ideal in a daiquiri, a rum punch, or a tall glass with ginger beer and lime, and perfectly pleasant neat over ice.
