Look for blackcurrant and plum up front, a touch of cedar and cocoa underneath, and firm but approachable tannins that tidy up the finish. It is at its best with steak, short ribs, a mushroom ragu or a wedge of aged cheddar. Give it twenty minutes open and it rounds out nicely.
