Palermo is Orin Swift's Napa Valley Cabernet, and it plays a subtler game than the label's gothic imagery suggests. Where the winery's blends go big, this one aims at classic Napa proportion: ripe fruit held inside real structure, oak used as a frame rather than a flavor.
Cassis and dark plum lead, with graphite, cedar and a savory herbal edge underneath, and firm tannins that stretch the finish out. Decant it for an hour and pour it with a ribeye, a rack of lamb or a mushroom risotto. Worth opening for a good dinner rather than a Tuesday.
