Jalisco, 100 percent blue weber agave, and eighteen months in oak. Padre Azul's anejo is built to be sipped rather than mixed, and everything about it, down to the hand-finished bottle and its leather-and-skull stopper, is arranged to make that point. This is the expression the house stakes its name on.
The oak has done real work here. Cooked agave sits under vanilla, caramel and toasted nut, with a light cinnamon warmth and a long, silky finish. Drink it neat in a copita at room temperature, slowly, and after dinner rather than before.
