Padre Azul comes out of Austria by way of Jalisco, the work of a family that wanted a tequila worthy of the leather-and-silver bottle it arrives in. Fully mature blue Weber agave is slow-cooked, and the unaged spirit goes from still to glass with nothing to hide behind. It earns its place on a back bar before anyone tastes it, and holds that place afterward.
Bright agave leads, herbal and faintly peppery, with citrus zest and a clean mineral edge through the finish. Pour it neat at cool room temperature to read the agave properly, or build a margarita that will not need much help. For the drinker who treats blanco as the honest expression.
