Twenty years is a long time to leave bourbon in wood, and most distillers will tell you it is too long — the barrel usually wins. Pappy Van Winkle Family Reserve 20 Year survives it on two counts: a wheated mash bill, which carries oak far more gracefully than rye does, and a selection process that throws out everything that has tipped over the edge.
What remains is dense and unhurried — dark caramel, dried cherry, leather, tobacco and brown sugar, with oak reading as depth rather than tannin. The finish goes on for a remarkably long time. A neat pour in a proper glass, and nothing else.
