Cricova is famous less for any single wine than for the place it is made: a vast network of limestone tunnels beneath Moldova, dug as quarries and converted into one of the largest underground cellars on earth. Pastoral is the sweet red the house has been known for across the region for decades.
It is rich and openly sweet, with stewed dark fruit, raisin and a soft, syrupy texture that finishes warm rather than sharp. Serve it lightly chilled, in small glasses, after a meal. It suits dark chocolate, walnut cake and hard cheese, and it makes a memorable cold-weather pour.
