Peligroso is made from fully ripe blue agave in Mexico and bottled without the vanilla-and-oak makeup that hides a lot of young tequila. The name means dangerous, which is mostly a wink, though there is something bracing about a silver poured this honestly. For anyone building a bar around agave rather than around labels, it makes a sensible cornerstone at a sensible price.
Clean and peppery on the palate, with cooked agave sweetness, a squeeze of lime zest and a dry mineral close. It shakes into a margarita without losing its shape and makes a crisp paloma with grapefruit soda and salt. Good over one large cube, too.
