Product Description
Penelope built its reputation on blending rather than distilling, and Architect is the clearest statement of that approach. The house four-grain bourbon is finished against toasted French oak staves, the same wood a winemaker would reach for, giving a whiskey with the spine of classic bourbon and the perfume of something closer to a fine red. Each build differs slightly, which is part of the appeal.
It drinks rich and dessert-leaning: baked apple, toffee, milk chocolate and a dusting of baking spice over a rounded body. Neat is the honest way to meet it; one large cube opens the fruit. It also makes an unusually plush Old Fashioned.
