Every pale lager in the world traces back to Plzen in 1842, when a Bavarian brewer working with Czech barley, Saaz hops and unusually soft water produced the first golden beer anyone had seen. Pilsner Urquell is still that beer, still brewed in the same city, and a twelve-pack is the right way to keep it in the house.
Bright gold under a dense head, it opens on honeyed malt and finishes on the firm, grassy Saaz bitterness that defines the style. Serve it cold but not ice cold, near 45 degrees, with schnitzel, roast pork, sausages or sharp cheese.
