Product Description
Ice wine is made by leaving grapes on the vine until a hard freeze, then pressing them while still frozen so only a small amount of intensely concentrated juice comes out. It is expensive to make, risky in any given year, and produces some of the most extraordinary sweet wine in the world. Purcari does it in Moldova, where the winters oblige.
Apricot, honey, candied citrus and a note of ginger, richly sweet but held in balance by piercing acidity, which is what separates ice wine from ordinary dessert wine. Serve it cold in small glasses with fruit tarts, blue cheese, or entirely on its own.
