Raspberry is one of the great cocktail fruits and one of the most inconvenient, which is the entire argument for a bottled puree. This is a concentrated, sweetened raspberry base for mixing rather than a beverage, and it contains no alcohol. It gives a home bar year-round access to a flavor that is otherwise dependable for about six weeks each summer.
Thick, tart-sweet and deeply colored, it sweetens and flavors in a single pour, so half an ounce is usually plenty. Natural applications include a Clover Club, a French 75 turned pink, a raspberry whiskey sour, iced tea, or sparkling water for something without alcohol. Shake before pouring and refrigerate once opened.
